Good morning! I am so excited--this is my first ever blog post! I am not a participant in this awesome challenge but I am the wife of one of the challengers: Patrick Wilson. Last night, Patrick and I were at my parent's house and as he was describing all of his weightloss goals, he referred to himself as a "Chubby Bunny" and I thought--how seasonably appropriate! Now, he's my husband so I think he looks handsome all the time, but I must admit that I am very excited about him making a commitment to eating healthier and being more active. I thought I was going to outlive him by 25+ years! Not to mention that all of his efforts have an even greater cause in the background: the children at St. Jude's!
In accordance with this healthier living, I am going to try to post healthy and delicious recipes for participants to try in an effort to eat healthier. In addition, I will be giving workout tips sometimes as well--healthy living is a passion for me! This past weekend, Patrick and I had a great meal that I want to share with you.
Salmon with Pineapple Tomato Salsa
1/4 cup fresh lime juice (about 1 lime)
2 tbsp extra virgin olive oil
2 tbsp soy sauce (get low sodium--it tastes the same!!!)
3 tbsp shallots, chopped
1 tsp sugar (splenda works fine here)
1/2 cup diced pineapples (if you get canned, drain syrup)
1/2 cup diced tomatoes
1/4 cup fresh basil, chopped
1/2 cup Chicken Broth (I recommend Swansons)
4 filets of salmon (6 oz peice)
lemon pepper to taste
1. Whisk together lime juice, olive oil, soy sauce, and sugar. Chop shallots, pineapple, tomatoes, and fresh basil (well worth the splurge if it's fresh!). I used my Magic Bullet to chop all of these individually. Pour chunks into liquid mixture and stir. Place in fridge for 15 minutes.
2. Place salmon on baking sheet and pour chicken broth over. Season with lemon pepper. Cook at 350 degrees for 14-16 minutes.
I served this with BROWN rice and asparagus. Not only delicious but it looked beautiful! The salsa saves well and would be great with chicken as well.
